Author's note: 'I wrote this piece in response to the 2001 Foot-and-Mouth outbreak in the United Kingdom. Images of the destruction by burning of thousands of sheep and cattle carcasses dominated the British news at the time. As the army was entrusted with this action, it appeared very much like a war against hoofed animals (hence the story's title)...'
